Garlic-lime salmon recipe
For the salmon
2 salmon fillets
2 tablespoons ghee (divided)
1/2 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon garlic powder
1/4 teaspoon sea salt
1/4 teaspoon freshly ground pepper
For the avocado Salsa
1 ripe avocado, pitted and diced
2 tablespoons salsa
2 tablespoons red onion, diced
2-3 tablespoons cilantro, chopped coarsely
1 tablespoon olive oil
1/2 lime, squeezed
Sea salt and fresh ground pepper as desired
Toss the chili powder through sea salt in a small bowl. Rub half the melted ghee onto the salmon fillets. Next, sprinkle the spices on the fillet.
In a skillet over medium-high heat, melt the remaining ghee and allow the pan to get hot.
Next, add the salmon (skin side down) and let it cook for approximately 3 to 5 minutes. Cooking time depends on the thickness of the fillet.
As the salmon cooks, prepare the avocado salsa. Then toss all salsa ingredients together in a medium-sized bowl. Serve and indulge.
If you're not eating the salmon right away, refrigerate to maintain freshness.
